1/2 cup butter
1 cup brown sugar
1 #2 can sliced pineapple
2 TB large whole pecans
1 cup sifted cake flour
1 tsp baking powder
1/8 tsp salt
3 eggs, separated
1 cup sugar
5 TB pineapple juice

Directions:
Directions:
Preheat oven to 375º

Melt butter in 9 x 9 baking pan.

Spread brown sugar evenly in pan & arrange pineapple slices on sugar, filling in spaces with pecans

Sift flour,baking powder & salt together.

Beat egg yolks until light. Add sugar gradually.

Add pineapple juice & sifted flour.

Fold in stiffly beaten egg whites

Pour batter over pineapple.

Bake for 30-35 minutes

Turn upside down on cake plate

Serve with whipped cream
