Red Velvet Cupcakes

2 ½ c. all-purpose flour
1 ½ c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cocoa powder
1 ½ c. vegetable oil
1 c. buttermilk (room temp)
2 large eggs
1 tsp. white distilled vinegar
1 tsp. vanilla extract
2 T. red food coloring

Preheat oven to 350ºF. Line 2 (12-cup) muffin pans with cupcake liners. In a medium mixing bowl, mix flour, sugar, baking soda, salt & cocoa powder. In another bowl, mix together oil, buttermilk, eggs, food coloring, vinegar and vanilla with mixer. Add dry ingredients to wet & mix until smooth & thoroughly combined. Fill liners about ⅔ full. Bake for about 20-22 minutes turning pans once about half way through.
 

Cream Cheese Frosting

1 lb. cream cheese, softened
2 sticks butter, softened
1 tsp. vanilla
4 c. powdered sugar

Beat cream cheese, butter and vanilla together until smooth. Add sugar on low speed until incorporated. Increase speed to high and mix until very light and fluffy. Frost cupcakes.
