veggie oil
mushrooms
pre-caramelized onions
heavy cream (3/4 cup) or make your own *see below
salt

Ok people I've tried many recipes and this one seems to work the best...

Get some chicken and cut the cutlets into thick pieces (rectangles, if you will). Douse both sides of the cut chicken with salt, pepper, garlic powder and parsley.

Then, coat the chicken with white flour on both sides until covered.

In a cast iron pan (they work best) put two tablespoons of butter and one tablespoon of veggie oil. Heat that shit up like medium heatish, but then you are going to have to lower it because it'll start to burn. Place the chicken cutlets and fry those bad boys for like 3-4 mins aside, or until golden crispy the way you like it!

Now, in the same pan that you cooked the chicken in (with all that yummy oil in it) put 1 tablespoon of butter and add 8oz of washed mushrooms. Cook that shit for like 4 minutes, or until brown.

Now.....I like to caramelize onions prior to this meal...and then thrown them into the pan when you cook the mushrooms. If you don't have pre-cooked caramelized onions, then just add them raw but chop them up small so they cook thoroughly. To make caramelized onions cut those bad boys up and put them in a pan on 325 in the oven for 2 hours. You can use PAM or a small amount of veggie oil.

At this point it gets hair because I'm going to give you measurements, but the truth is that you need to eyeball this people....were Italian and we all know that measurements don't mean shit when we cook so use your best eyeball judgement.

In the pan with the mushrooms and onions now add some chicken stock (1 1/4 cup) and add some dry marsala wine (3/4 cup). I also added Sherry cooking wine and I did NOT use that much chicken stock. I highly recommend using a combination of marsala wine and sherry. Cook this down until you have about half the amount of liquid...as you cook add some wondra to thicken up the sauce.

Now, if you don't have heavy cream (3/4 cup) here's how you make it from scratch. Take 3/4 cup of whole milk and mix it with 1/4 cup of MELTED butter....mix well....now you have heavy cream


Add 3/4 cup of heavy cream to the sauce with the mushrooms. Allow to cook and thicken until desired consistency. Now throw the chicken back in the sauce and mix it around.

Holy shit now you have a sick ass, delicious, restaurant quality meal for your loved ones!!! You're welcome bitches!
