Ingredients: 12 Large mushrooms 1 large onion or 2 small shallots diced (shallots will make the stuffing sweeter) 1/4 cup extra virgin olive oil 1 cup white wine 4 cups Lobster meat, approximately 4 tails / extract meat form tails and cut meat in chunks 1 1/2 cups seasoned bread crumbs 1/2 cup seasoned panko crumbs 1 cup Parmesan and Romano 1/2 and 1/2 1 cup heavy cream 1 cup mozzarella cheese 1/2 cup parsley / fresh 2 sticks salted butter

Directions:Clean mushrooms and pat dry / set aside In a large frying pan (I love using Curtis Stone cookware) saute diced onions or shallots until clear in color add lobster meat and cook until almost done add white wine and salt and pepper to taste. To this add 1 1/2 sticks salted butter and let melt, once the butter is melted remove from heat and add heavy cream, grated cheese, bread crumbs, parsley and mozzarella cheese. Now add mixture to mushrooms and place in a greased pan top each stuffed mushroom with a pat of butter and cook in 375 degree oven for 20 minutes or until golden brown. Remove and serve! |
