1/2 medium watermelon
2/3 cup sugar
1/3 cup orange juice
1 Tb lemon juice
1 envelope unflavored gelatin
1/2 cup COLD water

Scoop out pulp & remove seeds from the watermelon

Place about 2 cups of pulp into blender or food processor & blend until smooth

Transfer into large Mix-N-Store pitcher

Repeat the process until you get 6 cuos of puree.

Stir in sugar, orange juice, & lemon juice.; Set aside

In a small saucepan, soften the gelatin in cold water. Heat & stir until gelatin dissolves.

Add gelatin mixture into watermelon puree & stir until combined.

Pour into a container & put into freezer & chill for atleast 2 hours, stirring every hour.

After partially frozen, take mixture out of freezer, whip with mixer on medium speed until light & fluffy.

Let freeze 4 - 6 hours then let stand at room temperature for 10-15 minutes before scooping out
