1 box 16-oz mochiko flour (sweet glutinous rice)
1½ c sugar
2 tsp baking powder
2 cans evaporated milk
4 eggs
2 tsp vanilla
2 sticks butter, melted and cooled
1 jar coconut strings (macapuno)*
½ c sweetened coconut flakes

Preheat oven to 350º. In a large bowl, mix dry ingredients well with a whisk. In a medium bowl, combine the wet ingredients. Pour over dry ingredients and mix well. Add the coconut strings. Pour into 9 x 13 pan that has been sprayed with PAM or other cooking spray (alternately, you can use butter or shortening). Sprinkle the coconut flakes evenly on top. Bake for 45 minutes to 1 hour or until golden brown and toothpick inserted in the center comes out clean.

When I first printed this recipe from the 671 Guam Recipes FB group, the baking instructions were somehow truncated. I went back to the page to reprint it, but I couldn't find it, so I just winged it. Finally found the instructions!
