1 T coconut oil, melted (or oil of choice)
1 T honey
1 tsp smoked paprika
1 tsp cumin
¼ - ½ tsp cayenne depending on how hot you like it
1 tsp salt
3 cups mixed nuts

Directions:
Directions:
Preheat oven to 300 degrees. Combine all ingredients except nuts in a large bowl and stir until well mixed. Add nuts and toss until well combined. Pour into rimmed baking sheet lined with parchment paper and bake 15-20 minutes until fragrant and just lightly browned. Cool on wire rack.

These nuts are crunchy but not dry. Because of the honey, nuts may stick together. They grow on you. I first made this recipe when my husband and I went on a Paleo diet for 30 days. We did this to lose a few pounds before we went to Kona, Hawaii, knowing we would eat them back on. My goal was to lose 5 lbs, and I did that. Richard lost 17! He was happy to get off that diet, as he didn't like it very much.
