Salmon Patties Recipe

Ingredients: Patties: 2 - 6 ounce cans of wild Alaskan salmon- drained 1 -4.5 ounce envelope of starkist tuna creations sweet and spicy tuna- drained 2 large eggs 1 large egg white 1 tbsp. horseradish mustard (you can also use whole grain mustard or any favorite mustard) 2 tsp. dried dill ¼ tsp. salt 4 cups frozen shredded hash brown potatoes (about 12 ounces)- thawed olive oil to fry patties
Sauce: ⅓ cup reduced fat sour cream 1 tsp. lemon juice 1 tsp. dried dill

Directions: |
Directions:Combine ingredients for patties. Add the potatoes last. Heat the olive oil in large nonstick skillet at medium heat. Fill 1 cup measuring cup about ⅔ full and firmly pack down. Unmold onto a plate and press into a 3 inch cake. Transfer patties into warm olive oil, covering and cooking 5 minutes. Flip and cook covered another 5 minutes for cakes to turn a golden brown.
Combine ingredients for sauce and serve with salmon patties.
We usually double this recipe to ensure we have left overs... the patties warm up well in the microwave! |

Notes: From Linda: This recipe was originally shared with me by Laurie Kuzmik as a healthy dinner option. This recipe is how we got the girls to like fish. They don't like the sauce, but will eat the pattie plain with a side of peas. This is a great lenten dinner!
