Lemon Meringue Pie Recipe

1 9 inch baked pastry shell

1 cup sugar

3 Tablespoons cornstarch

1½ cups cold water

3 egg yolks slightly beaten

¼ cup lemon juice

1 Tablespoon butter

MERINGUE

3 egg whites

⅓ cup sugar



Directions:
Directions:
Preheat oven to 350º In saucepan, stir together 1 cup sugar and cornstarch. Gradually stir in water until smooth. Over medium heat, add egg yolks stirring constantly. Bring to a boil for 1 minute.

Remove from heat, and stir in lemon juice and butter. Cool and pour into pie shell.

In a small bowl with mixer, beat 3 egg whites at high speed until foamy. Gradually beat in ⅓ cup sugar beating until stiff peaks form.

Spread on pie going around to the edges of the pie first. Make sure to keep the merringue sealed to the crust then spread over the remaining pie.

Bake at 350º for 15-20 minutes until lightly browned.
