•8 sliced thick cut bacon
•1 Spanish or sweet onion, minced
•1 tbsp minced garlic
•4 tbsp unsalted butter
•5 potatoes, golden or russet, peeled and diced
•⅓ cup flour
•1 cup half & half
•2 cups chicken stock or broth
•1 cup sour cream
•2 scallions, thinly sliced
• salt & pepper to taste
• shredded cheddar cheese
Directions:
Directions:
1. Cook bacon & transfer to paper towel lined plate. Reserve 2 tbsp bacon grease & set aside.
2. Melt butter in a large pot over medium heat. Add onions & garlic. Cook until onions are clear and just about to start browning.
3. Add bacon grease & stir until combined. Whisk in flour gradually & cook whisking constantly until thickened.
4. Slowly whisk in half and half and then chicken stock.
5. Add potatoes, half of the scallions, and some salt & pepper. Bring to a boil, reduce heat & simmer until potatoes are tender.
6. Once potatoes are tender, use potato masher to mash & stir until the texture is right for you.
7. Crumble bacon & add into soup along with sour cream & cheese.
8. Garnish with remaining cheese, bacon, and scallions.
