Bacon-Wrapped Pork Loin Recipe

4 lb. boneless pork loin, untied
1-1/2 tsp. kosher salt
1 tsp. ground black pepper
1 T. vegetable oil
8 -9 slices of bacon
1 cup BBQ sauce
kitchen string
meat thermometer

SIMPLE SAUCES:
Savory: 2 T. Dijon Mustard
Spicy: 2 T. pickled jalapeños, drained and chopped
Fruity: 8.25 oz can crushed pineapple, drained
Smoky: 1-2 chipotle chilies in adobo (canned)

Directions:
Preheat oven to 450º
Season pork with salt and pepper. Heat oil in large skillet over medium- high heat. Add pork and brown on all sides. Cool for 10 minutes. Wrap bacon slices around roast, do not overlap. Tie with kitchen string to hold bacon in place. Place on rack in roasting pan, tucked end side down. Roast 15 minutes. Turn pork over and reduce oven temp to 350º, roasting another 15 minutes..Remove rack and return pork to pan, tucked end side up. Roast occasionally for about 50 minutes until bacon is browned and the thermometer inserted reads 145º. Remove from oven and let sit for 10 minutes.
Skim fat from pan juices, leave browned juices in pan. Add barbeque sauce and your preferred "Simple Sauce". Simmer over medium heat, stirring to loosen browned bits in pan. Simmer 2 minutes. Remove strings from pork and serve with sauce.
