2 cups white sugar
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
¼ tsp salt
1 ¼ cups vegetable oil
4 eggs
2 cups shredded carrots

Icing:
1 block cream cheese
4 tbsp butter
2 tsp vanilla
3cups icing sugar

Directions:
Directions:
Preheat oven to 350ºF and spray a tube pan. Sift together the dry ingredients in a large bowl. Add the wet ingredients and mix for about 2 minutes until all is moist. Pour intonpan and bake for 50 - 60 minutes. Remove from oven and let cool. Remove from pan and ice with cream cheese icing.

*As a garnish for the icing, add shredded carrot or coconut, or chopped walnuts.
