•2½ cups flour
•2 cups granulated sugar
•3 tsp baking powder
•1 tsp salt
•1 cup milk
•½ cup vegetable oil
•1 tbsp vanilla extract (or vanilla bean paste)
•2 large eggs
•1 cup water

Frosting
•½ cup unsalted butter (room temp)
•½ cup shortening
•4 cups powdered sugar
•1 tbsp vanilla extract
•2-3 tbsp milk

*For buttercream, replace shortening with unsalted butter and replace milk with heavy whipping cream.

Cake
1. Preheat oven to 350ºF & prepare pans/cupcake liners
2. Add dry ingredients to a bowl or electric mixer. Separately, combine all wet ingredients EXCEPT water.
3. Add wet ingredients to dry ingredients and beat until well combined.
4. SLOWLY add water to mixture until well combined, scraping sides as necessary.
5. Bake 15-17 minutes

Frosting
1. Combine butter & shortening, mix until smooth using whipping attachment for stand mixer.
2. Slowly add 2 cups powdered sugar & mix until smooth.
3. Add vanilla extract and 1 tbsp milk
4. Slowly add remaining powdered sugar & mix until smooth.
5. Add remaining milk as needed & mix until smooth.
6. Add frosting to cake once cake is fully cooled.
