1/2 cup Hellman's mayonnaise
1/2 cup sour cream
1-1/2 tsp. salt
1/4 tsp. pepper
1- 2 T. vegetable oil
1/4 cup vegetable oil
5 lb bag of potatoes
1/2 - 1 cup chopped scallion
1/2 - 1 cup shredded carrots

Directions:
Place unpeeled potatoes into a large pot. Fill pot with water just above the potatoes, add salt and begin to cook the potatoes. Keep the boil to a low rolling boil, until potatoes are fork tender. Drain the potatoes and let cool to the touch.
While the potatoes are cooling, prepare the dressing. Mix together the mayo, sour cream, 1/4 cup oil, salt & pepper. Mix well and chill.
When the potatoes are cool enough to hold, begin to peel the skins off and cut the potatoes into bite size pieces. Put into a bowl that has the 2 T. of oil and mix the potatoes with the oil so that the potatoes do not stick together. Add the scallions and the carrots. Gently toss, cover and let sit at room temperature. Add the chilled dressing when ready to serve.
