1-1/2 lbs. of spinach, Baby Spinach is best
6 large eggs - hard boiled; shelled & sliced
4 oz. turkey bacon, cooked & broken into bits
2 cups shredded Romaine lettuce
1 medium red onion, sliced thin
1 pkg of frozen peas
1 cup of Ranch salad dressing
1 T. cider vinegar
1 tsp. ground pepper
2 cups shredded Swiss cheese
1 cup of mayonnaise

Directions:
Directions:
Make the dressing: Mix together the Ranch, mayo, cider vinegar, pepper and 1/2 of the shredded cheese. Set aside.
In a straight sided large serving bowl - start to layer the ingredients as follows:
Put in 1/2 of the spinach. Then top with layers of sliced eggs, bacon bits, romaine, red onion & peas Cover with remaining spinach. Spred the dressing mixture over the top of the salad. Sprinkle remaining cheese over dressing. Cover with plastic or lid. Refrigerate at least 3 hours before serving.
To serve - do not toss the salad.
