1 cup soft shortening (part butter), 1 tsp vanilla, 1 cup brown sugar (packed), 3- 1/2 cups Gold Medal flour, 2 eggs, 6 tbsp honey, 2 twp baking soda, 6 tbsp honey, apricot jam

Directions:
Directions:
Mix thoroughly shortening, brown sugar, eggs. Stir in honey, vanilla, Sift together and stir in flour, baking soda. Chill until firm.
Heat oven to 350
Form dough into small balls. Place on ungreased cookie sheet.
Bake 10-12 until golden brown and tap tops until it springs back when lightly touched (oh shit! I never did this! maybe that is why
they didn't round back up to look like a hamburger bun? )
Cool slightly - put together in pairs with apricot jam in between. Makes about 3 dozen cookies..

Well - these cookies were always a family favorite in my house growing up! I've tried several times, and recently my own daughter, Christine has tried this recipe,but although it tastes magnificent, doesn't come out the same way? Perhaps it is that we didn't tap the tops until they spring back up? I have the original recipe from a magazine that my mom cut out- there were many type-o's and no one cared, but some how my mom made an amazing cookie!
