3 to 4 romaine hearts
3 T. extra virgin olive oil
1 T. vinegar
2 tsp. chopped fresh herbs
Salt and Pepper
Blue Cheese or Feta Cheese Crumbles

Directions:
Pull off old leaves and shave off the browned part of the root end, leaving the root end intact. Put the oil, herbs, salt and pepper in a small bowl and whisk Paint the lettuce hearts with the vinaigrette. Grill the romaine hearts until lightly browned, turning quickly. You can also sear on the stove in a fry pan over high heat. Add crumbled blue cheese or mozzarella cheese if desired. Serve immediately. Serve the hearts whole, or chop them and toss them for a salad. We've done many variations - like adding bacon bits, dried cranberries, or topping with cherry tomatoes. We first had this at a little pub in Schafferstown, PA, visiting Charlie and Marilyn. YUM!!
