3 beets, unpeeled, cut into chunks
2 c cashews, soaked in water for 3 hours or overnight
1 garlic clove
1/4 c olive oil
juice of 1 lemon
1/2 t salt
black pepepr

Directions:
Directions:
1. Cook beets in Instant Pot for 30 minutes. Cool
2. In a food processor, combine beets, cashews, garlic, olive oil, lemon juice, salt and pepper. Blend until smooth.
3. Store in airtight container for up to a week.
