1 lb stewing beef
1 T olive oil
1 t sea salt
1 t pepper
3 carrots, chopped
3 celery stalks, chopped
1 onion, diced
2 cloves garlic, minced
5 c beef broth
3 T tomato paste
1 t oregano
1 t basil
2 medium potatoes, peeled and cubed
1 c frozen peas
3 c baby spinach

Directions:
Directions:
1. In a large skilled, heat oil over medium heat.
2. Add stewing beef and sprinkle with sea salt and pepper
3. Cook beef until browned, stirring occasionally, for about 8 minutes.
4. Add carrots, celery,onion and garlic and cook for another 6 minutes or until vegetables are softened.
5. Add beef broth, tomato paste and spices and simmer over medium heat for 1 hour.
6. Add diced potatoes and continue cooking until potatoes and beef are tender.
7. Stir in frozen peas and baby spinach and cook for 5 minutes longer.
