4 tomatoes (home grown are really the best)
2 summer yellow squash
2 zucchini
1 large sweet onion
1 red pepper
1 green pepper
1/2 stick butter
1/2 bag of shredded mozzarella cheese
8 slices provolone cheese
salt and pepper
sprinkle of oregano

Directions:
Directions:
Thinly slice tomatoes, squash, zucchini, onions and peppers. Cover 9x13 pan with a mixture of the squash and zucchini. Then layer on onions and pepper. Dot with butter. Layer on tomatoes so all other vegetables and butter are covered. Cover tomatoes with salt and pepper. Then cover the tomatoes with provolone cheese. Repeat process. Then sprinkle on mozzarella cheese so top layer is fully covered with cheese. Sprinkle on oregano . Bake for 40 minutes on 350º or until cheese is golden. Let stand for 10 minutes, serve.
