2/3 cup pumpkin
3 eggs, beaten
1 cup sugar
3/4 cup flour
1 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
Crushed English walnuts

Filling:

2 TBSP margarine
8oz pkg cream cheese
3/4 tsp vanilla
1 cup powdered sugar

Mix all pumpkin roll ingredients together until thick. Grease a jelly roll pan, line with wax paper. Pour mixture on wax paper. Sprinkle with crushed nuts. Bake at 350º for 15 minutes. Sprinkle towel with powdered sugar. Turn cookie sheet onto towel to removeand roll towel and all. Let cool in refrigerator. Unroll and spread with filling.
In a small mixer bowl beat all filling ingredients until smooth and thick. Spread on the pumpkin log and roll log only. Cut in half. Cover with foil and refrigerate 4 to 5 hours or more. Sprinkle with powdered sugar before serving.
