15 tsp vegetable oil
150 g plain flour
¼ tsp salt
4 medium eggs, beaten
200 ml semi-skimmed milk

METHOD
1. Preheat the oven to 220ºC/200ºfan. Pour one tsp of oil into each hole of a 12 hole non-stick muffin tin and place in the oven to heat through.
2. Meanwhile, sift the flour and salt into a large bowl and make a well in the centre. Beat in the eggs until smooth, then gradually add the milk, whisking until the mixture has no lumps.
3. Pour the batter into a jug. Remove the tin from the oven and carefully pour the batter into the compartments. Return to the oven and cook for about 20 mins, until the puddings have risen and are golden in colour.
DO NOT OPEN THE OVEN UNTIL THEY ARE COOKED OR THEY WILL COLLAPSE!!
