2/3 c. wild rice
2 c. water
2 tart unpeeled apples, chopped
2 stalks celery, sliced
2 T. brown sugar
1 T. lemon juice
1/2 c. low fat yogurt
1/2 c. light mayonnaise

Directions:
Directions:
Wash rice. Bring rice to a boil in 2 cups water in sauce pan; reduce heat to simmer. Cook covered for 35 minutes or until done. Uncover and fluff with fork; drain. Toss the cooked rice with apples, celery, sugar and lemon juice. Combine the yogurt and mayonnaise; mix with salad ingredients. Refrigerate at least 2 hours before serving.
