Ingredients: Cake - 1.5 cups hot water 1 cup minute oats (Old fashioned) 1 cup brown sugar 1 cup sugar 1/2 cup shortening 2 eggs 1.5 cup flour 1 tsp baking soda 1 tsp vanilla 1/2 tsp salt 1 tbl cinnamon
Icing - 1 stick salted butter 4 tbl milk 1.5 cup brown sugar 1 cup minute oats (Old fashioned) 1 cup chopped pecans

Directions:Cake - Preheat oven to 350 Pour hot water over oats and set aside Add all remaining cake ingredients and mix with a hand mixer until completely mixed Pour hot water/oatmeal mixture into cake mix Stir until nicely mixed Pour into a cake pan and cook at 350 for 30 minutes. NOTE...about five minutes before cake is done, make the icing....
Icing - Place butter, milk and brown sugar in sauce pan and heat to a rolling boil, stirring frequently Boil for about a minute Add oats and pecans.
Immediately after cake comes out of oven, turn your oven to BROIL Dump the icing on the cake and place the cake under the broiler. Keep the cake under the broiler until it starts to bubble and the pecans ALMOST burn. Let the cake cool and enjoy! |

Notes: This cake gets better each day! It is so yummy! It was one of my Dad's favorite cakes! The reason it is named Jim Winters cake is b/c Jim brought it to the deer lease one year, and when my dad got home, he told my mom to get the recipe of the chocolate cake that Jim had brought. My mom called Jim's wife, and she was confused....she hadn't made a chocolate cake....it was this cake....my dad thought it was chocolate! So we started calling it Jim Winters cake and the name stuck!
