Bread Pudding

5 large eggs
3 c whole milk
½ tsp salt
1½ c sugar
½ tsp cinnamon (optional)
⅛ tsp nutmeg (optional)
10 c ½" cubed Challah or Egg style bread (about 1 loaf)
½ c canned crushed pineapple
¼ c sweetened shredded coconut
¼ c raisins (optional)
1 T unsalted butter

In a large mixing bowl, whisk together eggs, salt, sugar, cinnamon and nutmeg. Preheat oven to 350º. Cut Challah bread into ½" cubes. Add bread, pineapple, coconut and raisins to egg and milk mixture. Grease 9 x 13 baking dish with butter. Add bread custard mix. Bake for 1 hour and 10 minutes or until knife inserted in center comes out clean. Remove from oven and let stand for 5 minutes.
 

Pineapple Caramel Sauce

1 c dark brown sugar
½ c corn syrup
½ c unsalted butter
1 c heavy cream, divided
1 tsp vanilla extract
pineapple tidbits

In a saucepan, combine dark brown sugar, corn syrup, butter and half of the heavy cream. Using high heat, bring to a rolling boil. Allow mixture to boil for 10 minutes and add remaining cream. Let it boil for 1 additional minute. Add vanilla. Reduce to a simmer and stir with a high heat spatula. Add pineapple tidbits to the caramel sauce. Remove the caramel sauce from the heat and set aside.

Hint: Make the caramel sauce as the bread pudding is baking to save time and have both items ready to serve at the same time.

This recipe is from Disney's Polynesian Resort. We were at the Luau, and I jokingly asked our waiter if they give out their recipes. Before our dinner was done, he gave it to me! It is so good. I used all the optional ingredients. Oven temperatures vary, so always set the timer to go off at least 10 minutes sooner to make sure you don't overbake it.
