2 cups peeled and cubed potatoes
2 Tbsp. butter
2 tbsp. whipping cream
salt and pepper to taste

Scallop Filling
1 small onion finely chopped
2Tbsp. butter
2 flour
1/2 cup milk
1/4 cup white wine
salt and pepper to taste
15-25 medium scallops (about 11 oz. )drained and patted dry
1 cup grated Gruyere cheese
4 scallop shells (optional)

Prepare the mashed potatoes; In a saucepan of salted water, cook potatoes until tender. Drain. With a masher, crush the potatoes with the butter.
With an mixer, whip the potato and the cream until smooth, add additional cream if needed. Salt and pepper to taste.
Set aside in a large pastry bag fitted with a large star tip.
Preheat oven to 350º

Prepare the scallop filling
In a saucepan, soften the onion in the butter. Add the flour and cook for 1 minute, stirring constantly. Add the milk and wine and bring to a boil, stirring with a whisk. Cook for 1 minute. Remove from heat. Season with salt and peeper. Add the scallops and 1/2 cup cheese. Stir to combine.

Spoon the filling into four scallop shells or four gratin dishes. Garnish the rim with mashed potatoes. Sprinkle with remaining cheese.
Bake for about 10 minutes. Finish under the broiler until the cheese and potatoes are golden brown.
