Soup
7 cups sliced onions (about 2 lbs)
1/4 c butter (1/2 stick), melted
2 T flour
1 tsp salt
4 c water
3 T beef stock base (or 9 beef bouillon cubes)
4 c milk

Croutes
1/2 c butter (1 stick), melted
1 small clove garlic
8 slices French break (cut 1 inch thick)
2 c (8 oz) shredded Swiss cheese

Directions:
Directions:
Soup: Saute onions in butter in 4 qt saucepan about 15 minutes.
Stir in flour and salt. Add water and beef base; bring to boil. Reduce heat, cover and simmer 30-40 min.
Stir in milk; heat to serving temp. Do not boil.
(Yield: about 9 cups)

Croutes: Combine butter and garlic. Dip both sides of bread in butter. Place on jelly roll pan and toast in preheated 325 oven 10 minutes. Turn and toast an additional 5 minutes or until lightly browned.

To Serve: Place about 1 cup soup in oven-proof bowls. Top with 1 croute and 1/4 c Swiss cheese. Return to oven 10 min or until cheese melts.
