6 Egg Whites, Room Temperature
¼c. Granulated Sugar
6 Egg Yoks
½c. Granulated Sugar
6tbsp. Cocoa
½tsp. Vanilla

Filling
⅔c. Semisweet Chocolate Chips
2tbsp. Water
1½c. Whipping Cream

Batter
1.Line greased 10x15-inch(25x38 cm) jelly roll pan with waxed paper.
2.Beat egg whites until soft peaks form.
3.Add sugar and beat until stiff.
4.Beat egg yolks with sugar until lemon coloured and light.
5.Beat in cocoa and vanilla.
6.Fold into egg whites.
7.Spread onto prepared pan.
8.Bake in 350ºF (180ºC) oven for 15 to 20 minutes until an inserted toothpick comes out clean.
9.Sift icing sugar over a tea towel.
10.Turn cake out on top of a towel.
11.Peel off the paper.
12.Starting at the narrow end, roll towel and cake up together to cool.
13.When cool, unroll and spread the filling.

Filling
1.Melt chips and water together over hot water.
2.Spread over cake.
3.Whip cream until stiff.
4.Spread over the chocolate layer, saving a bit to garnish the top with a few dabs
roll.
