One Pot Chicken Pot Pie Noodles Recipe

1 lb chicken, bite-sized chunks
1/2 small yellow onion, diced
2 stalks celery
2 carrots (can leave out if included in bagged veggies)
2 c half-and-half
4 c chicken broth
1 bag frozen mixed veggies THAWED (peas, carrots, green beans)
8 oz egg noodles
1/2 tsp sage
1/2 tsp thyme
1/4 tsp cayenne pepper
1/4 tsp paprika
2 tsp kosher salt (optional if chicken broth is not low-sodium)
1 tsp pepper

Cook chicken in oil or butter in large pot
Remove chicken, sauté onion, carrots, and celery
Add liquids, scrape browned bits off bottom of pot and bring to boil
Add chicken, noodles, and spices
Cook on Medium heat for 8 min
Add bagged veggies
Keep on Medium heat until sauce has thickened, about 5-10 more minutes.
Remove from heat and sprinkle with breadcrumbs
If you’re like me and Kenj, serve with applesauce!
