2 cups all purpose flour
1 cup whole wheat flour
2 tsp baking powder
2 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
2 eggs
1+1/3 cups packed brown sugar
1+1/3 cup applesauce
1/2 cup vegetable oil
1+1/2 cup chopped rhubarb
granulated sugar or cinnamon sugar

Preheat oven to 400º

In large bowl, stir together all dry ingredients. Make a well in the center of bowl & set aside.

In medium bowl, beat eggs, stir in brown sugar, applesauce, & oil.

Add egg mixture all at once to flour mixture. Stir just until moistened. Batter will be lumpy.

Fold in rhubarb.

Lightly grease muffin tins & fill 2/3 full.

Bake for 18 - 20 minutes.
