4 quarts sliced cucumbers
6 medium white onions, sliced
1 green pepper, sliced in narrow strips
1 sweet red pepper, sliced in narrow strips
3 garlic cloves
1/3 cup salt
3 cups distilled white vinegar
5 cups sugar
1+1/2 tsp turmeric
1+1/2 tsp celery seed
2 TB mustard seed

Wash cukes & slice thin

Add onions, peppers & garlic. Sprinkle salt over the layers as you work.Cover layer with a layer of ice cubes & repeat the layers. Top again with ice & let stand for 3 hours.You may need to add more ice.

Drain cuke mixture thoroughly & place into big pot or cook in two batches.

Combine vinegar, sugar & spices. Pour over cuke mix.

Heat to just boiling then take off the heat.

Seal in jars according to canning directions.

Let stand for 30 days before eating
