1/4 cup butter
2 chicken breasts, deboned, skinned & cut up into cubes
1 cup sweet red peppers, chopped
2 TB finely chopped onion
1 cup chicken broth
1 cup milk
1/4 cup sour cream
3 TB ARGO cornstarch
1 - 4 oz can sliced mushrooms, drained
1/4 cup dry sherry optional

NOODLE NESTS:
8 oz noodles
1/2 cup sour cream
1 egg

Directions:
Directions:
In a large skillet melt butter over medium heat.
Add chicken & cook for 10 minutes, stirring constantly until lightly browned. Remove chicken & set aside

Add peppers & onions. Cook, stirring about 2 minutes. Stir in chicken broth & meat.
Reduce heat & simmer for about 5 minutes or until meat is tender.

Mix milk & cornstarch until smooth & stir into skillet.
Stirring constantly, bring to a boil over medium heat & boil for a minute.

Add mushrooms & continue cooking , stirring, another minute.

Remove from heat & stir in sour cream & sherry.

Serve over noodles nests

To Make Nests: Cook noodles according to pkg directions. Drain. Return to pot. Stir together sour cream & slightly beaten egg until well coated. For each nest spoon about 2/3 cups of noodle mix onto cookie sheet. Shape into a 5" circle & make an indention in the middle. Bake at 425º for 12-15 minutes or until set.
