2 c diced mango (ripe papaya also works well)
1½ c sugar
2 tsp baking soda
½ tsp salt
3 eggs
1 tsp vanilla
2 c flour
1 c shredded coconut
½ c chopped nuts
¾ c vegetable oil (I often use coconut oil)
½ c raisins

Directions:
Directions:
Preheat oven to 350ºF. Sift or whisk flour, salt, baking soda and sugar together in a bowl. Make a well and add the rest of the ingredients. Mix well. Pour into 2 greased 9 x 5 x 3 inch loaf pans and bake about 1 hour or until a toothpick inserted in the center of the pan comes out clean. Let cool in the pans on a rack for 5 minutes, then turn out onto a rack and let cool completely. These loaves freeze well. If you do freeze them, heat them in a 350º oven for a short while, then cool before slicing. I personally just thaw, slice and serve.
