2 lb. bulk Italian sausage or lean hamburger (** I prefer a meaty lasagna, so I use 1 lb. Jimmy Dean mild and 1 lb. Italian style sausage, or 1 lb. Italian or mild and 1 lb. hot, depending on taste preferences)
1 medium onion, chopped
1 garlic clove, pressed
1 can (16 oz) diced tomatoes
1 can (15 oz) tomato sauce
2 Tbs. dried parsley flakes
1 tsp. sugar
1 tsp. dried basil leaves
1/2 tsp. salt
9 uncooked lasagna noodles
8 oz. ricotta cheese
8 oz. cottage cheese
1/4 c. Parmesan cheese, grated
1 Tbs. dried parsley flakes
1 1/2 tsp. salt
1 1/2 tsp. dried oregano leaves
2 c. shredded mozzarella cheese
1/4 c. Parmesan cheese, grated

Directions:
Directions:
Cook and stir Italian sausage, onion and garlic in a large skillet until sausage is light brown; drain. Add tomatoes (with liquid), tomato sauce, 2 tablespoons parsley, sugar, basil and 1/2 teaspoon salt. Heat to boiling, stirring occasionally; reduce heat. Simmer uncovered until mixture is consistency of thick spaghetti sauce, about 1 hour.

Cook noodles as directed on package. In a bowl mix ricotta cheese, cottage cheese, 1/4 cup Parmesan cheese, 1 tablespoon parsley, 1 1/2 teaspoons salt and oregano. In an oblong pan (13 x 9), layer 1/3 each of the noodles, sauce mixture, mozzarella cheese and ricotta cheese mixture. Repeat 2 times. Sprinkle top with 1/4 cup Parmesan cheese.

Cook uncovered in 350 degree oven for 45 minutes. Let stand 15 minutes before cutting.
