1 lb can of salmon
1 beaten egg
½ c milk (or use juice off the fish)
1 c grated cheese
1 TBL melted butter
1 TBL lemon juice
1 tsp salt
1 c cracker crumbs
I like to add finely chopped celery, maybe even a small amount of onion.

Directions:

Mix all ingredients. Put into well-greased casserole dish.
You can also make patties and fry it in butter.
Bake at 350º about 40 minutes.

My dad fished in Ilwaco, and we had lots and lots of salmon.
Smoked salmon, salmon patties, salmon soufflé, salmon loaf, baked salmon, barbequed salmon. Canned salmon was used to make recipes like this.
I've had this recipe for what seemed my entire life.
Pops always wanted a mustard sauce over it, but never perfected one.
I think it's yummy just as it is.
