2 TB olive oil
1 cup chopped onion
2 apples, sliced thin
2 - 10 oz bags shredded Red Cabbage
1 cup dry red wine or chicken broth
1 cup water
1/2 cup red wine vinegar
1/2 cup brown sugar
1 tsp cinnamon
1/2 tsp salt
1/4 tsp pepper
1 small peeled & grated potato

Directions:
Directions:
Rinse & dry cabbage.

In large stock pot melt butter or olive oil . Add onion & apples 7 cook until softened (about 2 minutes).

Add cabbage & broth/wine. Cook for 5 minutes until its wilted.

Stir in vinegar, salt & pepper & sugar & continue to cook for a few minutes more.

Add potato, cover & cook 20 minutes more
