1 gal zucchini squash
2 green & 2 red bell peppers
8 small or 6 large onions
3 cloves of garlic, crushed
1/3 cup coarse salt
5 cups cider vinegar
4 cups sugar
1 1/2 tsp turmeric
1/2 tsp ground cloves
2 tbsp mustard seeds
3 tsp celery seeds

Directions:
Directions:
Place squash, bell peppers, garlic, salt and onions layered in crock, glass or stainless steel container. Cover with crushed ice and leave in refrigerator overnight.
In pot, combine vinegar, sugar, turmeric, ground cloves, mustard seeds, and celery seeds. Add sliced zucchini to boiling liquid and bring to a second boil.
Fill in jars and seal. Chill before serving.
