4 Tbs butter, melted
1 cup Brown rice flour
½ teas baking powder
¼ teas salt
½ cup plus ⅓ cup sugar, divided
2Tbs plus ¼ cup cocoa powder, divided
1 teas vanilla
¾ cup 2% or almond milk
1 egg or egg substitute
1¼ cups boiling water

Directions:

Pour butter in the bottom of a greased 4- qt slow cooker.
In a small bowl whisk together the flour, baking powder, salt, ½ cup sugar, and 2 Tbs cocoa powder. Stir in the vanilla, milk, and egg. Pour the batter into the slow cooker and spread it evenly. The butter will probably come up around the edges of the batter, this is OK.
Sprinkle⅓ cup sugar and ¼ cup cocoa powder over the cake batter. Pour the boiling water over the entire cake.
Cook on low 2½-3 hours or on high for 1½-2 hours, or until a toothpick comes out clean.
Remove the crock pot and allow to cool before serving so the lava underneath to thicken.
Serve with ice cream.
