2 pounds fresh okra pods
Vegetable oil
½ cup yellow cornmeal
¼ cup all-purpose flour
½ cup kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
Pinch of cayenne pepper
Kosher salt to taste

Directions:
1. Wash the okra well and drain. Cut off the tips and stem ends. Slice the okra crosswise into ½-inch slices.
2. In a Dutch oven, heat 2 inches of oil over medium-high heat to 350°F.
3. While the oil heats, combine the cornmeal, flour, salt, pepper, garlic powder, and cayenne pepper in a wide, shallow bowl. Roll the damp okra slices in the cornmeal mixture to coat. Carefully drop the okra into the hot oil and cook until golden brown, about 1½ to 2 minutes on each side. Remove with a slotted spoon to a paper
towel–lined plate to drain. Season lightly with salt, if desired.
