1 16oz bag frozen tater tots
1 T EVOO
1 lb. ground breakfast sausage
1 onion, finely chopped
1 C whole milk
1/2 C half and half
3/4 tsp. seasoned salt
1/4 tsp. cayenne pepper
4 large eggs
1 red bell pepper finely diced
1 green bell pepper, finely diced
2 C grated cheddar cheese
1 C grated pepper jack cheese
salt and pepper

Place tater tots in a 13x9" pan. Heat the EVOO in large skillet over med heat. Add the sausage and onion and cook until browned. Set aside to cool slightly, then sprinkle over tater tots.

Whisk the milk, half and half, seasoned salt cayenne, eggs, bell peppers and half of both cheeses in a large bowl; season with salt and pepper. Pour over the casserole, then top with the rest of the cheese. Cover with foil and refrigerate overnight.

Preheat oven to 350. Bake casserole, covered, until just starting to set around the edges, about 25 min. Remove foil and continue to bake until the cheese in browned and bubbly and the casserole is cooke through, another 20-25 min.
