North Carolina Gingerbread Recipe

2 cups cake flour
1 tsp baking powder
1/8 tsp soda
2 tsp ginger
1 tsp cinnamon
1/2 tsp salt
1/2 cup butter
1/2 cup sugar
1 egg, well beaten
2/3 cup molasses
3/4 cup sour milk ( or buttermilk)

Directions:

Preheat oven to 325º

Sift flour then measure. Add baking powder, soda, ginger, cinnamon, & salt & sift together 3 times.

Cream butter then add sugar gradually, until mixture is light & fluffy.

Add egg & molasses, then flour mixture alternating with milk a little at a time. Beat well after each addition until smooth

Bake in a greased 8" inch square pan for 20 minutes then raise temp to 350º & bake 30 minutes more.
