Vanilla wafer pie crust
1 c sugar
1/4 c cornstarch
1/8 tsp salt
4 egg yolks (save the egg whites)
2 c milk
1/3 c fresh lemon juice
3 Tbsp butter
1 tsp grated lemon rind
1/2 tsp vanilla


6 egg whites
1/2 tsp vanilla
6 Tbsp sugar

Directions:
Directions:
Whisk together sugar, cornstarch and salt in a heavy non aluminum medium saucepan. Whisk together yolks, milk and lemon juice in bowl. Whisk into sugar mixture in pan over medium heat. Bring to a boil and boil for 1 minute whisking constantly. Remove pan from heat, stir in lemon rind, butter and vanilla until smooth. Pour into pie shell.
Heat oven to 325º. Beat egg whites until foamy. Add sugar one 1 Tbsp at a time. Beat 2-4 minutes until stiff peaks form. Spread over warm pie filling being sure to spread meringue to outer edge of pie crush to seal. Bake until golden brown. Cool completely on wire rack.
