2 1/2 c sugar
1/2 c water
1/2 c light corn syrup
1/4 tsp salt
2 egg whites
1 tsp vanilla
1 c chopped pecans, toasted

Garnish toasted Pecan halves

Directions:
Directions:
Cook first four ingredients in heavy 2 quart saucepan over low heat until candy thermometer registers 248º (approximately 15 minutes). Remove from heat. Beat egg whites at high speed until stiff peaks form. Pour half of hot liquid in a thin stream over egg whites while beating continuously on high for about 5 minutes. Cook remaining syrup over medium heat until candy thermometer registers 272º (approximately 4-5 minutes). Slowly pour hot syrup and vanilla over egg white mixture beating constantly at high until mixture holds it shape (approximately 6-8 minutes) Stir in chopped pecans. Drop mixture quickly by teaspoonfuls onto lightly greased wax paper. Garnish with pecan halves if desired.
