2 Tbsp. olive oil
1/4 cup minced shallots
1/2 cup clarified butter
1/2 cup dry white wine
4-6 oz. pieces of skinned salmon fillets
1/4 cup heavy cream
1/4 cup Dijon mustard
2 Tbsp. minced fresh parsley
1/4 tsp. white pepper
1/4 tsp. salt
parsley sprigs for garnish

In a large skillet heat the oil over moderate heat until it is hot and cook the shallots in it, stirring until they are soft. Add the butter and wine. Bring the mixture to a simmer. Cook salmon for 1 minute on each side or until it just flakes.

Transfer the salmon to a platter and keep it warm.

Reduce the cooking liquid over moderately high heat by one third, whisk in the cream, the mustard, parsley, S&P and simmer for 2 minutes. Stir in any juices that accumulated on the platter. Spoon some of the sauce over the salmon. Serve the remaining sauce separately. Garnish with parsley
