3 cups heavy whipping cream
3 TB (packed) coarsely grated & peeled fresh ginger
10 large egg yolks
1 cup + 4 tsp sugar

Preheat oven to 325º

Combine cream & ginger in a heavy saucepan. Bring to a simmer over medium heat. Remove from heat & let stand 20 minutes. Strain cream into a small bowl, pressing on the solids left in sieve.

Whisk yolks & 1 cup of sugar in medium bowl until well blended. Gradually whisk in warm cream.
Divide custard amongst 8 - 3/4 cup ramekins or custard cups.

Place cups into a large roasting pan. Pour enough warm water to come halfway up sides of ramekins.

Bake custards until just set in center when gently shaken - about 45 minutes.Remove from oven & water bath & chill, uncovered until cold - atleast 3 hours. Cover & chill overnight.

Preheat broiler.

Place custards on a cookie sheet. Sprinkle each with 1/2 tsp of sugar. Broil until sugar melts & carmelizes. browning evenly - about 1 minutes.

Refrigerate custards until topping is cold & brittle - about 1 hour, up to 2 hours.

Garnish with strawberries & mint leaves.
