Olive oil
8 ounces pancetta
1/2 onion, peeled and finely chopped
5 garlic cloves, peeled and finely sliced
1/2 cup vodka
Two 14½ ounce cans crushed tomatoes
Salt
1 cup heavy whipping cream
Small handful of fresh basil leaves
Freshly ground black pepper
1 pound pasta
Parmesan cheese for serving

Directions:
Directions:
Heat a good bit of olive oil in a large skillet. Add the pancetta or bacon and cook over medium heat until golden and almost crisp. Add the onion and continue cooking until tender. Ad the garlic.

Pour int eh vodka and cook for 1 minute, scraping up any browned bits that have stuck to the bottom of the pan with a wooden spoon.

Add the tomatoes with a pinch of salt and stir everything together. Bring to a boil, then reduce the heat, cover, and let simmer for 10 minutes. Remove the lid and continue to simmer for another 5 minutes. Stir in the cream and basil, season with salt and pepper, and simmer for another 5 minutes (do not boil).

Cook the pasta, then add the pasta to the skillet. Increase the heat to moderate, and cook, stirring to coat the pasta, for 1 minute. Add a little cooking water if mixture seems dry.

Serve with grated Parmesan cheese.
