Ingredients: 1 lb. ground beef (extra lean 90-96%) 1 lb. ground turkey 1 ½ - 2 cups plain breadcrumbs 1 small onion, chopped 2 tbsp. parsley flakes or chopped fresh parsley 2 tbsp. Worcestershire sauce ½ tsp. pepper ½ tsp. salt 1 16 oz. jar of mild salsa Ketchup

Directions:Mix all together, divide mixture in half into 2 9x5 loaf pans. Cover with aluminum foil and bake at 350º for 50-60 min. In the last 15 min. of baking time, remove the aluminum foil and squiggle tomato ketchup along the top and return to oven (without the foil).

Notes: Rick's Grandma Krause owned a restaurant in Ellwood City, Pa., and her meatloaf was Rick's favorite. This is not that recipe! LOL! After I started making this one, it became his new favorite. He loves making cold meatloaf sandwiches with the leftovers (bread + meatloaf + ketchup (optional)). The twist is the salsa - it makes the meatloaf so moist and tangy! Use any brand - I always buy what's on sale or the cheapest.
This recipe makes 2 meatloaves - you'll need 2 loaf pans so you can bake them both at the same time. After baking, you can let one cool and freeze it for use later. Once it cools, wrap it tight in aluminum foil and then a plastic bag and place in freezer.
