"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
3 cups of any kind of flour
¼ teaspoon of yeast
1 tsp of salt
1.5 cups of very hot water (no hotter than 130 º)

Directions:
Directions:
In a large bowl put in flour, yeast and salt and stir
Add the water (remembering to check temperature and not over 130º)
Mix it all together. will be kind of sticky
put plastic wrap over bowl and let it sit on the counter top for 3 hours
after 3 hours (or whatever time you get back to it post 3 hours) you now put it onto a well floured surface, then add another 2 or 3 tablespoons of flour on the top of the bread.
then you take a scraper and fold it over a couple of times to turn it into a kind of a ball
then you put the ball into a bowl that has parchment paper in it
just drop it in, cover with towel and then leave it while the over warms up
your oven should warm to 450º
put the parchment paper and ball into a dutch oven and put in oven for about 30 minutes. take it out and take the lid off. take the parchment paper off and put back into pot and oven for10-15 minutes depending how crispy you want it
Done!!

Personal Notes:
Personal Notes:
we got this from Tommy and it is so easy that even Mom could make it!! turned out excellent. the first batch didn't work because we used boiling water. not listening as it says hot water all over the place.
hope you enjoy.
also, you can add olives or cranberries or any other things you might want to add to keep it interesting
