Salted cod fish
tomatoes
onions (white or red) sliced into small pieces
green onions
black pepper
olive oil

Directions:
Directions:
Shred cod fish into thin pieces; Soak fish in cold water until most of the salt is removed. Rinse a few times and squeeze excess water. Lightly fry the codfish. Add tomato and onions, green onions. Mix everything into a bowl and black pepper and olive oil. Toss well and eat with crusty bun or crackers or West Indian "bake"

Recipe copied from George Lum-Kam's notes. This is actually a Jamaican dish but Dad made it a few times for us when he visited the family in Vernon. We served ours with his home-made "bake" or buns.
