1+1/4 cup wheat germ
1+1/4 cup quick cooking, or old fashioned oats, uncooked
1 cup all purpose flour
1/2 cup packed light brown sugar
1 tsp baking soda
1 tsp vanilla
1/2 tsp salt
3/4 cup unsweetened applesauce
1/2 cup light corn oil
1 stick corn spread or butter, melted
1/4 cup thawed egg substitute

Preheat oven to 400º. Spray 3 muffin (dozen cups each) tins with non stick spray.

In a large bowl, mix wheat germ, oats, flour, brown sugar, baking soda & salt.

In medium bowl, mix apple sauce, butter, egg substitute & vanilla until blended.

With wooden spoons, stir applesauce mixture into dry mixture until JUST MOISTENED leaving the batter lumpy.

Spoon a TB of batter into each cup & bake for 10 to 12 minutes.
